Take the name literally: Mary Perez's tiny, brightly colored east side restaurant specializes primarily in enchiladas. They come filled with a variety of ingredients: smoked chicken, barbecue brisket, chopped sirloin. Veggie enchiladas are a welcome change of pace from the typical spinach filling and are instead jammed with yellow squash, sweet onions, zucchini, and grilled poblano peppers. All come topped with Perez's housemade sauces, from a sweet poblano mole to a biting ancho-chile sauce.
