An acclaimed Fort Worth BBQ truck has graduated to brick & mortar: Called Trevino’s Craft Smokehouse, it does smoked meats with a Mexican twist and is now open at 120 N. Church St., in Jacksboro, west of Fort Worth, in a cute building across from the Jack County Courthouse.
Trevino's is a family operation from husband-and-wife Dustin and Sara Trevino who first opened the BBQ truck in 2021. Dustin oversees the cooking, while Sara manages front and back of the house.
Their menu includes pork belly burnt ends, pork spare ribs, cheddar jalapeño sausage, brisket tacos, chori-queso mac & cheese, and Texican street corn.
Meat plates are $15-$25, and lunch specials are $11-$14. Dessert consists of a twist on sopapillas, made from their tortillas coated in melted butter and cinnamon sugar and pork belly.
"We don't do desserts, but that pairing made sense and stuck," Dustin says.
The Mexican influence on the menu comes from his family. He grew up in San Antonio with 14 cousins, and everybody cooked, using spices like cumin and garlic. At the restaurant, they make their own flour tortillas using beef tallow.
Dustin is a former oilman who was let go during COVID. Seeking a change of pace, he bought a 1,000-gallon smoker from Austin Smoke Works and started smoking meats for local charities and cook-off events.
“I was reevaluating life, trying to figure out what we were going to do for the next two years," Dustin says. "Then a pit builder said, 'Sell some BBQ, you’ve got a pit for it.'. A lightbulb went off in my head and that’s kinda where it started."
They moved from Midland to Possum Kingdom Lake, and after only nine weeks open, serving BBQ out of the food truck one day a week, earned recognition from Texas Monthly — an affirmation of sorts that they were on the right track.
