Hokkaido Ramen and Sushi chain brings Asian splendor to Watauga

Ramen and sushi are coming to Watauga via Hokkaido Ramen and Sushi, taking over a former Pei Wei at 7620 Denton Hwy. #632, where it will serve its signature menu of sushi, ramen, and hibachi. Opening day is May 6.
Hokkaido has roots in Japan as well as branches across the U.S., including Houston, Austin, Denton, Arlington, McKinney, and Fort Worth. The company also has a sibling, Kobayashi Noodle U.S.A., which provides the ramen noodles that are a Hokkaido staple item.
The menu places a special focus on the tonkotsu pork broth ramen found on the northern island of Hokkaido in Japan.
The local franchisee is Louie Lou, who also owns the Hokkaido Sushi and Steakhouse in Arlington, which opened in 2016, and the Hokkaido in City View Towne Crossing in Fort Worth that opened in 2024.
He says that the Watauga location will feature an expanded selection of Chinese dishes such as beef with broccoli and sesame chicken. He's also adding a lobster ramen featuring a lobster tail, tempura shrimp, and a white seafood broth, for $29 — the priciest item on the menu.
Hibachi plates with fried rice, a vegetable medley, and choice of protein such as steak, chicken, or shrimp are $11-$23.
Sushi options include basics like California and yellowtail, as well as specialty rolls such as the Lion King roll with spicy crab, cucumber, and avocado, and the Hokkaido roll with fried shrimp, cream cheese, spicy crab, avocado, and tuna.
Additionally, there will be alcohol and Japanese drinks like Ramune soda and teas.
Lou, a colorful character and a bit of a moving target, promises activities and specials on opening day — he'll even treat visitors to his own singing performance.
