Rudy's Country Store & BBQ brings new brisket outpost for Fort Worth

A major Texas barbecue restaurant chain is expanding its footprint in the Fort Worth area: Rudy's Country Store and Bar-B-Q, founded in Leon Springs in 1989, is opening a location in Burleson, at 12369 South Fwy., at the intersection of Rendon Crowley Road.
A representative from the company confirmed that the restaurant would be opening with a target date being "the end of the summer."
Rudy's is known for its rustic, country barn-style dining room where you file through a line and cross in front of the pit to select the smoked meat of your choice which you can buy by the pound, in a sandwich, or even by the slice.
Options are plentiful and include brisket in moist and lean versions, turkey breast, pork loin, baby back ribs, pork ribs, chicken, sausage, jalapeno sausage, pulled pork, and ham. Special meats available on weekends only include prime rib and peppered tenderloin.
Sides include potato salad, beans, creamed corn, corn on the cob, cole slaw, and a jumbo smoked potato which you can get plain or topped with meat.
The chain also offers a line of breakfast tacos featuring eggs in combination with bacon, brisket, chorizo, beans, and sausage.
Burleson represents the second outpost in the FW area. The first opened at 6800 N. Fwy. in 2015. There are four other locations in North Texas including Arlington, Allen, Denton, and Frisco; and more than 35 locations total in Texas, Oklahoma, Colorado, New Mexico, and Arizona.
Burleson will have Rudy's signature menu and style, but with one major departure: It will not have an adjoining gas station, which is a nod to its roots when founder Mack "Doc" Holiday would sell smoked meats from an old gas station.
According to a Rudy's spokesperson, with their newer stores, they've departed from the format of having a gas station on site.
Burleson is not the only place getting a new Rudy's; the company is opening a new location in San Antonio. According to MySanAntonio.com, the restaurant is opening near the airport in a former Grady's BBQ. It will be the fourth location in San Antonio, and is slated to open in October.
