Granbury bakery-cafe Baked Bread & Pastry has super sourdoughs & croissants
Granbury is the lucky home of Baked Bread & Pastry Co., an artisan bakery and cafe focusing on slow fermented sourdough breads and European-style pastries.
Baked started as a food truck in 2019, before settling into a cool brick-and-mortar location at 401 Cleveland Rd. in 2020, where they bake up crusty breads, decadent pastries, and scrumptious sandwiches six days a week.
Sourdough bread is the star, in options such as as cranberry walnut and rosemary olive, which features both kalamata and castelvetrano green olives.
There are different breads for different days: garlic Gruyere and multi-grain are available on Wednesdays, cranberry walnut is Friday-Saturday.
They also do:
- bagels, so buzzy right now, in classic options including asiago, sesame seed, everything, and plain
- croissants and other laminated-dough treats such as kouign amann
- pastries including some not-so-common options like bear claws, cheese danish, and pop tarts
Owner Kris Trawick left a career in insurance to follow her passion, quitting her job in 2017 to go to culinary school and learn the basics of baking, as well as doing intensive training around the country in sourdough, bagels, and croissants.
“Hospitality was what I loved,” she says. “I wanted to have a sandwich shop with the foundation being our amazing sourdough bread.”
Her recipes are founded in her education, but she stays up on current trends. "The rest was practicing, studying my craft and nurturing a strong desire to create exceptional products," she says.
She still has the passion, making Baked the kind of independently-owned treasure that every neighborhood wants, which she conveys artfully on the bakery's Facebook page.
"Did you know that we produce 30 different flavored pastries every single day?" she asks. "I’ve wrestled with the idea of streamlining our lineup and producing more of fewer items but I can’t do it. I can’t imagine taking even one of our pastries away! Besides, that would be boring!"
They rotate in new items regularly: For example, during the holidays in 2023, they're doing pies.
The bread and croissants are put to use at their in-house cafe on sandwiches such as their Southwest BLT with chipotle mayo on cheddar jalapeno sourdough bread, a croissant egg sandwich, bagel sandwiches, and a decadent challah French toast, plus salads and daily creative specials like a Reuben sandwich stacked with corned beef, sauerkraut, and Russian. They're open for breakfast and lunch, Monday-Friday 7 am-2 pm and Saturday 8 am-2 pm.
Her bakery houses three ovens equipped for each baking need, including a steam-injected bread oven with a stone hearth, made specifically for sourdoughs.
One telltale sign of the quality they embody is their use of Stumptown coffee, the legendary roaster from Portland, Oregon, in their lineup of espresso drinks.
Their breads and other baked goods are also sold at other like-minded high-quality shops and restaurants including Let it Brie Charcuterie, Bluebonnet Meat Company, Deja Brew Coffee Shop, Restaurant Anise, and Hao's Grocery Cafe in Fort Worth.
But Baked is well worth a visit: an open and bright space featuring a charming mashup of industrial and farmhouse decor, with a nice patio, hot coffee, and doting personal service that makes it a perfect mid-day excursion.
