Veteran Fort Worth operators to open one-of-a-kind sports bar-restaurant
A unique new twist on a sports-bar is coming to Fort Worth from a team of veteran operators: Called Drinks N’ Such, it'll open at 2736 Stanley Ave. not far from TCU, with the goal of becoming a go-to spot for eats, drinks, and "unforgettable" nights.
The concept is from Clayton Grunewald, Tino DeFranco, and chef David Hollister, who bring decades of food & beverage experience. Grunewald and DeFranco both work for Funky Lime Hospitality Concepts, the group behind success stories such as Reservoir, The Whiskey Garden, Shot:30, Junk Punch, Reservoir at Toyota Music Factory, and Your Mom’s House. Hollister is a Tastemaker Awards nominee for Best Chef whose resume includes Wild Acre, Gas Monkey Bar 'N Grill, and Dagwood’s. Their fourth partner is Drew Boatman (Rusty Nickel, Side Door Cocktails & Coffee, Bodega Speakeasy, Star Cafe).
"Tino and Clayton and I have been friends for years, and we'd been flirting with the idea of doing something together," Hollister says. "We liked the idea of a sports bar with an innovative food program. There isn't anything like that in the area."
They've secured an unusual site next door to the Rusty Nickel, a sprawling complex that was most recently home to Carter's Coffee, a drive-thru coffee trailer that recently relocated to 2808 Stanley Ave.
"It's a great space with an elongated main building, with room for a couple of bars — the outside space is just as big as the inside, so we'll do an indoor-outdoor patio and bar with one-of-a-kind interactive elements that we think will take it to another level," Hollister says.
What those next-level elements are, they're not ready to say — intrigue! But the food component will be like a twist on a food hall in that it will host multiple chef concepts under one roof.
"We've created one commissary kitchen that will serve as a shell for three food concepts, each run by its own chef," he says. "Each will have its own theme with a small menu, so that customers can choose from different cuisines like pizza or chicken, but that can change seasonally: maybe Asian one season and Cajun the next. This will give us a chance to keep up with what's hot, and it will also give young chefs an opportunity to learn the business side, by running their own mini-businesses."
Hollister, Grunewald, and DeFranco are all more than conversant in the sports bar realm: Grunewald and DeFranco run Reservoir, a sports bar with locations in Fort Worth and Las Colinas at the Toyota Music Factory, and Hollister was previously at Gas Monkey Bar 'N Grill.
"Gas Monkey Bar 'N Grill was a sports bar to a certain extent, with live music, like this — but one big difference will be scale," Hollister says. "At Gas Monkey, we did a lot of food. It was mass production, no saute pans on burners. For me, the whole cooked to order is part of the fun about this."
They'll have 36 TVs, with two zones inside: sports and live music.
"This means we'll be able to have a game on inside, with music on outside, or vice versa — as well as different games at the same time," Hollister says. "It'll give us the capability to show all genres of sports from football, basketball, baseball, hockey, to soccer, wrestling, golf, nascar and possibly UFC."
Their target opening date is, of course, sports-related: "We are hoping to be open by the time college football starts," he says.
