Restaurant by Fort Worth chef Tim Love to open in New Braunfels hotel

Fort Worth chef Tim Love is lending some culinary star power to a new hotel going up in New Braunfels: A new SpringHill Suites by Marriott will open at 738 IH 35 N., featuring an outlet of his Tex-Mex concept, Paloma Suerte.
According to a release, the hotel is expected to open in the fourth quarter of 2026.
This is not Love's first partnership with SpringHill Suites by Marriott. His tapas restaurant-bar, Atico, sits on the rooftop of a SpringHill Suites hotel in the Fort Worth Stockyards, not far from the original location of Paloma Suerte.
Paloma Suerte is Love's tribute to Tex-Mex, which he debuted in Fort Worth's Mule Alley in December 2022. Located in a renovated 1860s mule barn, with an outdoor seating area offering views of the Stockyards riverwalk, the restaurant is designed to evoke spots south of the border with margaritas, mariachis, and a giant deconstructed piñata.
The menu does Tex-Mex with a twist, from basics like enchiladas and chips & salsa to innovative dishes like crab stuffed shrimp and duck birria tacos. The restaurant was nominated for a CultureMap Tastemaker Award for Best New Restaurant in 2022.
The New Braunfels hotel will be eight stories with 150 suites, meeting halls, fitness center, breakfast lounge, boat docks, and a two-tier swimming pool with another Love restaurant venue called Palomalita, serving bites and cocktails.
Tim Love's hospitality venture Love Management, Inc. includes Caterina's, Gemelle, Lonesome Dove Western Bistro, Woodshed Smokehouse, Love Shack, Queenie's Steakhouse, White Elephant Saloon, Atico, Hotel Otto, Tannahill's Tavern & Music Hall, Stewart's, and Paloma Suerte.
