Dessert shop debuts decadent cheesecakes in North Richland Hills

Cheesecake from Cole's Custom Cheesecakes.
There's a new destination for Fort Worth dessert fans that's all about the cheesecake: Called Cole's Custom Cheesecakes, it's a sweet shop that just opened at 8700 N. Tarrant Pkwy. #103 in North Richland Hills, where it's serving cheesecake by the slice, whole cheesecakes, and mini bite-sized cheesecakes, as well.
The shop is from Cole Jones, a hospitality veteran whose recipes combine his cheesecake passion with the preservation of his family heritage.
Jones first launched the company in 2020, while he was caring for his grandmother, who had been diagnosed with Alzheimer’s disease.
Determined to preserve her tradition of baking, he learned her recipes and began selling cheesecakes — initially out of the back of his car, then at pop-ups and farmers markets, and then at partnering businesses such as JR's BBQ-N-More. His hard work earned the company a "Best New Business Award" from the Keller Chamber of Commerce in 2023.
The unique twist is the way he incorporates the flavors of his grandmother's recipes into his cheesecake varieties. For example, there's a Grandma's Sweet Potato Pie cheesecake, which features the flavors of what was his grandmother's signature pie.
"The sweet potato pie is our best-seller," says manager Airos Gilchrist. "Cole's grandmother is the heart of the business. While growing up, he'd spend summers with his grandma and her specialty was pies. He's using all of her recipes."
Other flavors include Bourbon Apple Pie, Caramel Pumpkin, Lemon Blueberry, NY Style Plain, NY Style with Strawberries, Reese's Chocolate Peanut Butter, and Caramel Pumpkin.
And if there's any doubt about the inspiration, the restaurant pays tribute with a big photo of Cole's grandmother on the wall, along with her recipe books, displayed on shelves.
The restaurant is located in a former cookie and doughnut shop in a small center that's also home to Rita’s Italian Ice & Frozen Custard and Kindred Coffee. It's all takeout, as there are no seats for dining in.
For now, pre-order is available for whole 9-inch cheesecakes, priced from $50 to $60; mini bite-size cheesecakes, priced from $30 to $47 for a dozen, depending on variety; and cheesecake filled chocolate covered strawberries, $40 to $45 per dozen.
"We're still in opening mode and figuring out what we'll offer, but eventually, we'll have a set menu with a variety of flavors available on site," Gilchrist says.
