Highly anticipated Fort Worth restaurant La Pistola reveals chef and menu

A buzzy new restaurant coming soon to Fort Worth has named its head chef and revealed a peek at the menu. La Pistola Kitchen + Saloon, the Spaghetti Western-inspired restaurant and saloon moving into the old Taco Heads spot across from Dickies Arena, is slated to open in September.
To lead the kitchen, they've wrangled a chef with an appropriately Western name: Austin Wyatt. The man who sounds more like a lawman in a Taylor Sheridan series or a cowboy in a John Wayne movie is actually a graduate of The Culinary School of Fort Worth. He has worked in kitchens across Dallas-Fort Worth and counts among his mentors acclaimed local chefs Jason Harper, Victor Villarreal, and Josh Harmon.
La Pistola will be Wyatt’s first executive chef role, according to a release. He'll oversee a menu that combines Italian-inspired dishes with an approachable Texas sensibility, including sandwiches, fresh pastas, steaks, roasted chicken, seafood and other plates.
“We're thrilled to have Austin leading our kitchen,” partner Camille McDonald says in the release. “He has real range and he's a genuine teacher, the kind of chef who will make our establishment better.”
Partner Jeffrey Yarbrough says Wyatt brings the enthusiasm the restaurant was looking for.
“I love seeing Austin’s excitement in creating and cooking for this concept,” Yarbrough says in the release. “He brings the unbridled passion and leadership we were looking for, to complete the band of bandits."
Wyatt lives in the Parker County town of Peaster with his wife and their two children. He joins the project as La Pistola finalizes its menus for the fall opening.

When partners Yarbrough and McDonald first announced La Pistola in July, they described it as a combination of old-world Italian hospitality and the spirit of the American West, inspired in part by the resilient heroines of 1970s Spaghetti Westerns.
Now, there's more detail on what will be coming out of the kitchen.
Sandwiches and salads
Lunch will feature up to 10 sandwiches and salads, including:
- Cowgirl Italian: Salami, mortadella, soppressata, pickled relish, Calabrian aioli, butter lettuce, beefsteak tomato, olive oil, and white balsamic vinegar
- The Cowboy: Soppressata, mortadella, prosciutto, Calabrese salame, pickled relish, Calabrian aioli, lettuce, tomato, and onion
- The Camille: Soppressata, coppa, Calabrese salami, pecorino, arugula, and truffle honey on focaccia
- Rosewood Ranch Grilled Steak Sandwich
- Fried Bologna: American cheese and mustard on Texas toast, served with salt-and-vinegar potato chips
- Niçoise Salad with Smoked Trout: Egg, marinated olives, pickled onions, cucumber, anchovy vinaigrette, and fermented leeks
Lunch plates
For those wanting something more substantial, the menu will include:
- Chicken Paillard: Jus, fennel, bitter green salad, and grilled lemon
- Fresh Pasta Bolognese: Rotating fresh pasta, housemade Bolognese, Parmigiano Reggiano, and basil pesto
- Shrimp Piccata: Shrimp, capers, lemon, and tagliatelle
Dinner will expand into house-made pastas, veal Parmesan, seafood, chicken, steaks and meats, along with coastal Mediterranean-inspired sides. Highlights include:
Dinner entrees
- Cowgirl Lamb T-Bone: Red wine jus, roasted carrots, and Gruyere polenta
- Chef's Stuffed Pasta: Ricotta and seasonal wild mushrooms with beef and truffle butter sauce
- Branzino: Lemon Dijon crème, confit tomato, roasted fennel, and parsley oil
- Roasted Chicken: Chicken bone jus, roasted cipollini onion, shaved radicchio and mint
- Pork Schnitzel: Served with bitter greens salad
Starters
- Mussels: Thinly sliced jalapeños in white wine broth
- Cowboy Toast: Chicken liver mousse, pickled onions, buttermilk emulsion and herb salad on Texas toast
- Saffron Risotto Arancini: Saffron risotto, wild mushrooms, and arrabbiata sauce
Late-night bites
- Mini Mezze Platter: Three meats, three cheeses, rotating housemade pickles, crostinis and seasonal preserves, served with oil and vinegar, gremolata, and Calabrian aioli
- Loaded Tins: Tinned fish with crackers and whole-grain mustard
- Pickled Eggs: Served with giant pretzel sticks
The owners previously said the beverage program will include an approachable wine list, Italian-inspired cocktails and beer, with signature drinks including the "She's a Pistol" Whiskey Sour with Italian hot honey, and a $5 Rosé All Day.
Tenured entrepreneurs Yarbrough and McDonald said their goal is to create a neighborhood restaurant that can handle all sorts of occasions, from lunch after tennis and rosé with friends to cocktails before a Dickies Arena concert or pasta on date night.
“Camille and I riff off each other the same way, whether it's menu development or décor,” Yarbrough said when La Pistola was announced. “She's got energy; with her it might be a slug in the arm instead of a wink, but we both know when we've got a hit.”
McDonald added: “Jeffrey and I both believe successful restaurants start with understanding the city, the street, and the people. This project is about building something that belongs in Fort Worth.”
La Pistola Kitchen + Saloon is slated to open in September at 1812 Montgomery St., in Fort Worth's Museum District.
