Saginaw Fire Station to become restaurant park with burgers and steak

A former fire station in Saginaw will soon be serving burgers and steak: The Saginaw Fire Station at 400 S. Saginaw Blvd., which was retired in 2023, will be home to a location of local chain Jakes Burgers as well as a steakhouse called Split Rail. Their deadline for opening is late 2027 but a spokesperson says that they could open by the end of the year.
The project will feature the two full-service restaurants, each with a full bar; spacious outdoor seating; and a backyard experience with play areas for families and children.
It's a partnership between the city of Saginaw with MAD Concepts Group, the restaurant company that owns the Jakes chain; and Blue Plate Network, a restaurant real estate company.
MAD Concepts Group was founded by Courtney Lindley and Bob Gregg in Addison in 2015. They operate Jakes Burgers and Tacos & Avocados across Dallas and Fort Worth.
Jakes Burgers is a small chain that was founded in East Dallas in 1985. It was acquired by MAD Concepts Group in 2021 and has since evolved beyond its roots in burgers and beer. The brand now offers an expanded menu with dinner entrees like chicken-fried chicken and gravy and weekend brunch. There are 12 locations across the Dallas-Fort Worth area and Waco.
Split Rail is where rustic charm meets Texas ranch elegance, inspired by Western hospitality and classic ranch life. The restaurant specializes in open flame cooking with the soul of the Texas countryside.

The restaurants range from 2,500 to 7,000 square feet and will provide a dining atmosphere that blends food with a lively, social environment.
MAD Concepts is the second suitor for the restaurant and entertainment concept, which was first proposed for the fire station in 2022 to be executed by Local Favorites (El Fenix, Snuffer's, Meso Maya), with a completion set for 2024.
When the city conducted an asbestos survey and saw drainage repairs were needed, Local Favorite pulled out.
“We take pride not only in our menu but also in the environments we create,” says MAD Concepts Group Founder and President Courtney Lindley in a statement. “The backyard area in Saginaw will serve as a vibrant community hub, bringing people together beyond the dining table.”
