Fort Worth chef to open Asian-Mexican fusion restaurant Shogun Taqueria

An exciting new restaurant will open at a Fort Worth address with good history: Called Shōgun Taqueria, it's a Mexican-Japanese fusion restaurant opening in late March in the Near Southside District, at 1508 W. Magnolia Ave. — better known as the former Paco’s Mexican Cuisine space.
Shogun is from chef Francisco "Paco" Islas, who also owns Paco’s Mexican Cuisine, which remains open in Sundance Square. He only just recently closed this original location of Paco's in the Near Southside January 2025, and is eager for the chance to do a reset and introduce something new.
"We'd been at it for eight years at this location, and I'd been playing with the idea of combining Asian and Mexican cuisines for some time now," Islas says. "I became inspired to experiment with the two cuisines after doing a competition with chef Kevin Martiinez from Tokyo Cafe."
"Outside of Mexican food, Asian food is my second-favorite cuisine," he says. "I'm big on spice and I love the profiles in Japanese food."
Shogun will be a Mexican-Japanese fusion concept specializing in tacos, ramen, and street food neighborhood — a unique taqueria combining traditional Mexican flavors with Japanese techniques.
“Our goal with Shōgun Taqueria is to bring together two traditional and flavorful cuisines in a way that feels fresh yet familiar,” he says. “We’re excited to introduce Fort Worth to a dining experience that’s both adventurous and deeply rooted in tradition.”
Shōgun Taqueria's one-of-a-kind menu will feature dishes like Tinga Gyoza, Pork Carnitas Tonkotsu Ramen, and Kimchi Quesadillas — Mexican street food blended with Asian/Japanese artistry. The restaurant will features creative dishes such as tacos on fresh corn tortillas and hot stone parrilla, where premium meats like wagyu, pork belly, and short ribare cooked tableside.
The ramen is especially creative in its combination of flavors from both cuisines such as Birria de Res Miso and Menudo Ramen. Appetizers include Asian dishes like Japanese fried chicken karaage, side by side with guacamole. Entrees average about $15.
Once he gets the restaurant open, he'll use the space next door for a speakeasy with craft cocktails. But one thing at a time.
