Nostalgic new Fort Worth restaurant resurrects revered chef's recipes
A new taco joint on West Magnolia Avenue is resurrecting recipes from one of Fort Worth’s most storied chefs.
Called Tres Amigos Tacos & Tequila, it's now open in the former Yucatan Taco Stand space at 909 W. Magnolia Ave., serving a menu inspired by the late Paul Willis, known for spearheading innovative concepts including Pedro’s Trailer Park, Cabo, and the original Fuzzy’s Taco Shop.
Restaurateur and longtime Fort Worthian Sandy Rankin, who worked alongside Paul in kitchens for 17 years before he died in 2013, is behind the project alongside her husband Cory and son Collin (hence, the “tres amigos”).
“When chef Paul died, he gave me his recipe books and asked me, if anything happened to him, to carry on his legacy,” Rankin says. “We have taken his recipes from several of his concepts and intertwined them with our own ideas.”
Some of those recipes that appear on the menu include tempura shrimp tossed in mango habanero sauce ($9.99), a tempura fish sandwich ($12.99), and the Pescado Loco Taco ($4.39), Willis’ original fish taco that also comes grilled or tempura-battered and topped with chihuahua cheese, lettuce, tomato, red onion, cilantro, purple cabbage, queso fresco, and roasted garlic aioli in a corn tortilla.
Willis also founded the original Yucatan Taco Stand back in 2008, located in the same West Magnolia Avenue space. Patrons will find high-piled “Loaded Latin” nacho platters ($6.99-$12.99) on the Tres Amigos menu that are reminiscent of Yucatan’s. Toppings range from tequila lime chicken and mango habanero shrimp to green chili carnitas and smoked brisket.
“Chef Paul opened Yucatan Taco Stand at this location. When it became available, we thought it was perfect spot to carry on his memory,” says Rankin.
Other menu categories include quesadillas, Latin sandwiches served with fried plantains, “El Jefe” burritos with Latin rice and pureed black beans, and burrito bowls. Most menu items range from $9.99 - $12.99, except for tacos, which fall in the $3 - $4 range. (There’s a pricier soft shell crab taco with lobster queso that runs for $8.49.)
Early morning breakfast tacos are $2.29 - $3.29, and migas and chilaquiles are $8.99.
Willis was also involved in the long-gone M&M Steakhouse on Fort Worth’s North Side, having partnered with another tenured Fort Worth restaurateur, Keith Kidwill, on the concept. Tres Amigos pays homage to M&M, too — with “Kidwill’s Cowtown” ribeye dinner plate ($37.99), featuring a 14-ounce flame-grilled ribeye topped with signature garlic butter. There’s also a ground sirloin and chorizo meatloaf plate ($15.99) topped with mushroom demi glaze that’s a nod to Pedro’s Trailer Park.
As the restaurant name implies, tequila is big on the menu with nearly 50 selections available. Tres Amigos also offers daily drink specials, including $5 ranch waters on Thursdays, $5 palomas on Fridays, and $15.99 Mexican beer buckets Saturday and Sunday along with $3 mimosas and $5 bloody marys.
